Pleurette produit ses champignons sur du marc de café récupéré auprès de restaurateurs lillois. Auparavant résidus de production, les pieds de pleurotes sont désormais valorisés grâce à l’élaboration de cette nouvelle sauce façon bolognaise. Ils constituent un substitut innovant de protéines végétales et permettent d’obtenir une sauce végétarienne, bio et savoureuse.
